Bacon and Egg Buttermilk Waffle

I know it can be hard to decide whether to make mom a sweet or savory dish. There's no better way to start mom's special day than by serving breakfast to her cozy bed. We've got a quick recipe that can be easily prepared by Dad and the kids that will satisfy mom’s sweet and savory desires!

Ingredients

  • 3/4 cup All-purpose flour
  • 1 1/2 tsp. Baking powder
  • 1 tsp. Baking soda
  • 1/4 tsp. Kosher salt
  • 8 Eggs, large
  • 1 3/4 cup Buttermilk
  • 3 tbsp. Unsalted butter, melted
  • 12 slices bacon
  • Lettuce, bag
  • Maple syrup, for serving
  • Cheese, grated

Directions:

  1. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  2. Beat 2 egg whites (keep the 2 yolks aside), preferably with an electric mixer for 3 min until stiff peaks form and set aside.
  3. Whisk together the 2 egg yolks, buttermilk, and butter in a large bowl. Slowly add the flour mixture and fold in the whites until no streaks remain.
  4. Spray LK’s Non-Stick Grill Spray in the LK’s Waffle Maker and turn up the heat accordingly on your stove.
  5. Gently pour the waffle mixture into the Waffle Maker and heat until golden brown. To keep the waffles warm, preheat the oven and place the waffles in LK’s Small Round Casserole.
  6. In LK’s Cast Iron Skillet Pan, fry the remaining 6 eggs and bacon until the desired outcome.
  7. Add the eggs, bacon, and lettuce onto your waffle. Drizzle with maple syrup and cheese to serve.
  8. Serve this breakfast to mom in bed to enjoy along with her favourite cup of coffee/tea.

Optional: You can also make 2x waffles to create a sandwich
