LK's | Chakalaka Boerewors Rolls

Ingredients

  • 1.25 kg Boerewors Sausage
  • ¼ Cup oil
  • 1 Onion, chopped
  • 1 Bay leaf
  • 1 Tsp. thyme
  • 3 Garlic cloves, chopped
  • 1 Tbsp. mild curry powder
  • 1 Tsp. smoked paprika
  • 1/2 Tsp. ground turmeric
  • 1 Carrot, peeled and grated
  • 3 Large tomatoes, chopped
  • Salt and pepper, to taste
  • 250ml Water

Directions

  1. Add oil in the LK’s Cast Iron Skillet and place over medium heat.
  2. Add the onion, garlic, bay leaf and thyme, and allow to fry for 4 minutes until softened. Sprinkle in the spices and leave to cook for another 2 minutes.
  3. Add the tomato and carrot, and cook for a further 4 minutes.
  4. Gently throw in 1 cup of water, stir and reduce the heat to medium-low. Leave to cook for 15 minutes, stirring occasionally, until reduced and thickened. Season with salt and pepper to taste and set aside.
  5. Preheat the oven to 220°C. In the LK’s Bake Pot, lightly oil the surface and add the sausage. Leave to bake for 25 minutes until golden brown and cooked through.
  6. Build the boerewors by firstly adding boerewors and then finally, the chakalaka. Serve and enjoy!
